How To Make Asian Dipping Sauces: Green Mango, Chili Coriander, and Tamarind Dips

In the first article of this series, we explored the Basic Ingredients for Cooking Cambodian-Southeast Asian Food. One of the most common foods found in Cambodian, and many other Southeast Asian homes, that are easy to make and inexpensive, are Dipping Sauces.
Dipping Sauces are used during meals and in between as a snack. You can dip just about everything in these sauces, including Fruit, Egg Rolls and Spring Rolls, Bread, Crackers and anything in between!
I always like to slice an apple into little pieces and dip into these sauces for a great treat!
You can surprise your friends and family with these easy sauces at parties and social gatherings.
Imagine a Super Bowl Party with several Dipping Sauces to choose from! You will definitely be a popular host!
In this article we will learn about 3 different delicious recipes that are inexpensive and easy to make. Lets start making Dipping Sauces in less than 10-15 minutes to prepare, and a wait time of 30 minutes to allow the flavors to mingle!
Chili Coriander Dipping Sauce: Ingredients and Recipe

Fish Sauce
| 4 Tablespoons

Small Red Shallots

Garlic Clove

| Peeled and Chopped

Bird's Eye Chili Pepper
| 1
| Finely Chopped
|
Bunch of Corriander (Cilantro) Leaves
| 1 (small)
| Finely Chopped
|
Add the Sugar and Fish Sauce to the water and mix until the sugar is completely dissolved. Add the rest of the ingredients and mix well. Let sauce sit for 30 mins, then serve!
Green Mango Dipping Sauce: Ingredients and Recipe

Fresh Lime Juice
| 1/2 Cup (125 ml)

Fish Sauce
| 1/2 Cup (125 ml)

Palm Sugar or Dark Brown Sugar
| 4 Tablespoons

Warm Water
| 1 Cup (125 ml)
|
Combine all the ingredients in a convenient dipping bowl until sugar is dissolved. Allow to sit for 30 minutes. You're done! That's it! I told you these recipes were simple! And wait until you taste them!
Green Mangoes
Tamarind Dipping Sauce: Ingredients and Recipe

| Remove seeds and fibers

Fish Sauce
| 1/2 Cup (125 ml)

Although still an easy recipe, you are going to have to "work" a little on this one! This Dipping Sauce requires either a Mortar and Pestle (traditionally), or you can cheat with a Food Processor.
Combine the Pulp from the Tamarind with the Chili Peppers and Garlic Cloves. You may peel the skin off the garlic cloves, but this is not nessasary. Pound them in the mortar, or if using a food processor you can "pulse" until everything is combined.
Add the Sugar and Fish Sauce, and mix well.
Allow to sit for 30 minutes and then serve!
You now have the best Dipping Sauce Recipes for your party, or just to enjoy with the one you love-or even the whole family!

@randomcreative: A lot of people think the green mango dip is the best because you can only get mangoes in Cambodia for about 1 month per year. It is a rare treat unless you dry the mangoes, but they taste different. Thanks for the comment!

@Chanroth: Sorry it took me so long to reply! I have tried pro hok a few times and I don't really like it! Too fishy for me. My wife on the other hand,, eats it almost every day! I am not kidding! It is her favorite food. Every Khmer family I visit or party I go to serves pro hok. I know that it is the favorite of foods among Cambodians and I wish I liked it! Another quality post, JS! One of my best friends is Vietnamese, and she introduces me to different types of foods--Spring Rolls with her homemade peanut sauce, for instance, is one of my faves. It's interesting to try different foods. Do you have a lot of recipes on here? That's one thing I want to eventually post more of. I'll have to check yours out.
None of the other two can beat green mango. If you make all three of the dipping and taste all three, green mango will outrun the other two. That's probably my opinion but I have tried all three and I like green mango more. It is very good if you eat it with deep fried fish and rice. Have you eaten mud fish (pro hok) before? Get 1 tablespoon of mud fish and stir it with 2 tablespoon of palm sugar evenly and add pepper. Dip it with green mango, apple....any fruits that is sour, taste really good. There is a lot of other dipping as well. Sweat fish sauce, mud fish...so on...in Cambodia, mud fish (pro hok) is number one. :)
